Didi Griffin's Chicken Picatta - Perfected!

Ingredients
1 pound
thin sliced chicken (or slice normal chicken into thin halves)
Flour
1 and 1/ 2 cup chicken stock
​4 table spoons butter
4 lemons
Capers
Banana peppers

Recipe
Before preparing the chicken, start to boil water for pasta on side. This dish is great with pasta, rice or orzo.


1. Season chicken with salt, pepper, and oregano or Italian seasoning.
2. Put flour on a plate and lightly dust the chicken in flour.

3. Cover the pan with olive oil and one tablespoon of butter.
4. Once the olive oil is hot, cook chicken on each side until both sides are brown (usually 5 minutes a side)
5. While chicken is cooking, juice your lemons
6. Remove chicken from pan
7. Turn heat to simmer
8. Add chicken stock and lemon juice and let boil (turn heat up if needed)
9. Once boiled, put back on simmer and add remaining 3 tablespoons of butter, capers, and banana peppers
10. Add chicken and let simmer in the sauce for at least 20 minutes
11. Spoon the sauce over the chicken
Serve over pasta, and enjoy!


​This recipe is for one pound of chicken, double recipe for 2 or more pounds if you like a lot of sauce. It is excellent accompanied with Didi Broccoli on the side!
Didi Broccoli
​Preheat the oven to 375
Coat small pieces of broccoli in olive oil, salt, pepper, garlic salt and oregano
Let cook for 30 mins or until a little charred
Enjoy with your favorite hot sauce :)
SO YOUR MARINATE YOUR TURKEY?!

When my sister first got married (35 years ago) and was hosting her first Thanksgiving, her hairdresser asked her if she would marinate her turkey. "Marinate a turkey?" was her response! We have never done that. And 35 years later, we would only cook a turkey if we prepared the turkey the night before with this marinade. We have found, it truly helps make the moistest turkey we ever had! Bon Apetit!

  1. In the sink, wash the turkey thoroughly in water.
  2. Then, in the sink, rinse the turkey with white vinegar.
  3. Put the turkey in a pan.
  4. Puncture the turkey all over and pour olive oil on the turkey.
  5. Clean inside the turkey.
  6. Peel an apple (I use a granny smith apple) and stick it inside the turkey.
  7. Mix 1 cup white wine, 1 Tablespoon Dijon mustard, the juice of one lemon, mix, and pour over the turkey in a small bowl.
  8. Leave in the refrigerator overnight.​
MY FAMOUS BANANA BREAD RECIPE
​

Mix the following:
1/4 cup softened butter
3/4 maple syrup
1 egg
Then mix in:
3 ripe bananas
Then mix in:
3 TBS milk
Add:
2 cups flour
1/2 t. salt
1/2 t. baking powder
1/2 t. baking soda
walnuts optional
Bake at 350 for 1 hour
